Abstract: Sweet potatoes are one of the most important foods grown and consumed in the South. They have long been a staple food in the Southern diet, particularly among rural families. Dietary studies made among rural families in Georgia show a consumption of approximately two and one half times as many sweet potatoes as Irish potatoes. While small amounts of canned, dehydrated, and frozen sweet potatoes are used during the summer months, the period of highest consumption is from November through February, when fresh potatoes are abundant.
