Abstract: Depending on what part of Appalachia you are focusing on the concept of “green beans” could vary in shape, size, and color. Certain varieties of bean dishes are thought to be unique to Appalachia, like shuck beans and leatherbritches, however the root of these beans is actually international, harkening to Germanic roots. In this video, the author examines the types of bean, examines whether store bought or local beans taste different, and looks at the impact of green beans in literature. This record comprises a video and a script. The video, which, in accordance with UNC Asheville policy, has been captioned and uploaded to YouTube, is hypelinked in "Additional Information" below. The script is available through NCDocks as a pdf file.
