Abstract: Johnson County, Tennessee once held the title the “Green Bean Capital of the World.” Commercial snap beans evolved into the lens through which county residents viewed the world and their place in national and international modes of food production and distribution. This study documents the rise of the commercial bean industry and the social, cultural, agricultural, and economic changes that followed.
