Abstract: Two individual 8-week metabolic balance studies were conducted to compare the calcium bioavailability from cheese to that from spinach and tofu (soybean curd) in adult women. Subjects consumed each of 2 controlled diets for 3-week periods in a crossover experimental design. Calcium balance, oxalate excretion, urinary hydroxyproline, and serum alkaline phosphatase were determined from urine and fecal, and 2 fasting blood samples collected during the final 2 weeks of each 3-week dietary period.
