Abstract: This is a patient education brochure designed to describe the development of food habits of the people of eastern North Carolina (written in collaboration with Kristen Borree , PhD , anthropology. It then localizes the dietary guidelines for Americans. And , it includes a quiz for kitchen safety (developed in collaboration with Carolyn Lackey PhD , RD , LDN , Food and Nutrition Extension Specialist , North Carolina State University).
